Tasty little lunch
Thought I would share this little dish I threw together for lunch the other day. It was very simple and very tasty.
Baked goats cheese with a dollop of caramelised onion chutney, side salad of asparagus, tomato and avocado and a hunk of brioche.
It was delicious. Will definitely be having this again

BBQ Pulled Pork
This yummy recipe is super easy, virtually fat free and mouth watering good.
Ingredients:
1 Large Pork Joint (Remove all visable fat)
1 Carton of Passata
5 Tablespoons of Worcester Sauce
3 Tablespoons of Balsamic Vinegar
3 Tablespoons of Sweetener
2 Crushed Cloves of Garlic
1 Tablespoon of Smoked Paprika
Method:
1. Sear the pork in a hot frying pan
2. Add the rest of the ingredients to a saucepan and simmer for 10 minutes
3. Transfer the pork to a roasting dish lined with foil
4. Pour the sauce over the pork
5. Cover the pork with foil
6. Bake at 160 degrees/gas mark 3 for 5 hours
7. Remove the pork from the oven and rest for 15 minutes
8. Use 2 forks and gently pull the pork so that it shreds

Healthy Takeaway Alternative - Prawn & Turkey Balls
I fancied a healthy alternative to a Chinese takeaway, and rustled up this little number, Steamed Prawn and Turkey Balls.
For this recipe I used:
1 pack of minced turkey
a handful of ready to eat prawns
teaspoon of ginger
2 finely sliced cloves of garlic
half a chilli
juice of half a lime
couple of splashes of soy sauce
After finely chopping the prawns I threw all the ingredients into a bowl and squished with my hands before rolling into balls.
I then steamed them for 12 minutes and served on a bed of noodles with Pak Choi. Delicious, quick and healthy.
